Where to eat when in.... Toronto

A dermatologist and his wife are wowed by the alchemical cuisine at Colborne Lane

Last year, we ate at Colborne Lane in downtown Toronto, a restaurant we had heard great things about. The chef Claudio Aprile had been written up in Toronto Life, and my wife and I were eager to try his food — science-based molecular gastronomy. What better timing than my wife's birthday which was just around the corner? I arranged for babysitting, and my wife and I went out for an evening of fine dining.

Colborne Lane is one of the most unique dining experiences in Canada, and a great place to celebrate any occasion. It is pricey, but the 10-course tasting menu is so special and unusual that it's definitely worth it. The decor was sleek, modern and simple, with great background music. The service in the restaurant was just perfect, with plates being cleared at the right times so that the dinner did not drag on; there were 10 courses to get through, after all!

The way the food was served was an experience in an of itself; the dishware was unusual and the presentation of the food was artsy. The server would explain the plethora of flavours before we launched into each dish.

The highlight for us was the ice cream which was prepared in front of us by pouring crème fraiche into a large bowl of liquid nitrogen which created an enjoyable display of vapour and cool air, and ultimately a delicious ice cream was prepared. All in all, we had a memorable birthday dinner and we continue to talk about our meal. For a special occasion and a unique experience in Toronto, this is the place to go.
