5 Spices, 50 Dishes

Cooking Indian food can be intimidating. As much as you’d love to make them, some of the most delicious dishes involve dozens of spices, and techniques that seem oh-so tricky. Cooking teacher Ruta Kahate wants to change that with 5 spices, 50 dishes: Simple Indian Recipes Using Five Common Spices (Chronicle Books).

The concept is simple. Buy coriander, cumin and mustard seeds, as well as ground cayenne and turmeric and make basic dishes like spicy eggplant with tomatoes (cayenne, cumin and turmeric) and roasted lamb with burnt onions (cayenne, turmeric).

Here, we’ve chosen two of the 50 dishes ideal for the last weeks of summer, along with a dessert that also draws on a limited number of spices with luscious results.
