Back to Basics: 100 Simple Classic Recipes with a Twist

If you’ve never heard of chef Michael Smith, you’ve certainly seen his face. Currently residing in PEI, he’s the host of Chef Michael's Kitchen, Chef Abroad, Chef at Home and Chef at Large seen on Food Network Canada. He’s an ambassador for simple, sustainable cooking, but that doesn’t mean his food is humdrum: in fact, he led the chefs who cooked for the world’s Olympians in the Whistler Athletes Village in 2010. And while his seventh cookbook, Back to Basics: 100 Simple Classic Recipes with a Twist, published by Penguin Canada, is full of beautifully illustrated dishes that are good enough for athletes, we think these easy upgrades of good old favourites are more for regular folk like us. Here are three of his “basic recipes,” which are anything but boring.
