The Best Casserole Cookbook Ever: With More Than 500 Recipes

"Casseroles are making a comeback." This, according to Beatrice Ojakangas, author of The Best Casserole Cookbook Ever, published by Chronicle Books. It’s no wonder. Casseroles (used to describe both the dish the food is made in and the food itself) are so easy to make and they freeze well. Read: a weeknight winner.

To emphasize this, Ojakangas’ cookbook is full of 500(!) recipes for breakfast (broccoli and mushroom frittata), lunch (baked polenta with cheese and Swiss chard) and dinner (mashed potato-crusted pork pie) - all minus the canned soups that were used in the '50s.
