Fish: 54 Seafood Feasts

In Fish, published by Chronicle Books, cookbook writer Cree LeFavour writes that there are as many ways to prepare seafood as there are fish in the sea. Raised on a ranch near the Salmon River in central Idaho, she presents 54 ways in Fish via six chapters: American, European, Latin, South Asian, East Asian, and Middle Eastern and African.

She believes that good ingredients, simple methods and intuitive (and sometimes even counterintuitive) combos are all that’s needed to make fillets, shellfish and crustaceans come alive — on a plate, that it. She also thinks that seafood is ideal for last-minute suppers because it rarely takes more than 15 minutes to cook.

Here are two recipes that’ll help “scale” back your time in the kitchen and another — a shrimp risotto — for that cold weekend when spring still feels so far away.
