There’s little wonder why Susie Middleton has written two cookbooks about veggies. She’s the former editor and current editor-at-large of Fine Cooking magazine and she lives in Martha’s Vineyard (read: farms, farms and more farms!). Fast, Fresh & Green (about veggies as side dishes) was published by Chronicle Books in 2010; The Fresh & Green Table (about veggies as mains) was released just this June. Middleton isn’t a vegetarian — she’s more pro-veggie than anti-meat — so her books don’t celebrate soy or meat substitutes. Instead, her latest, featured here, is all about using an aromatic veggie as a base (think garlic or onions), pairing a meaty veggie with a lighter green one (say, mushrooms with spinach), then adding proteins and carbs. Our very favourite recipes follow.
