Quinoa 365

It takes 15 minutes to cook one cup of quinoa; time well spent since the South American seed (which bulks up to triple its uncooked amount), can last for up to a week in the fridge and be used in almost anything from breakfast pancakes to salads, soups and stews. What’s more, it’s one of the healthiest foods in the world.

A favourite with vegetarians and the gluten-intolerant, the nutty-flavoured “grain,” as it’s more commonly thought of, is high in protein and a complex or “good” carb so you’ll feel full longer. It also contains all eight essential amino acids.

As if these aren’t reasons enough to make room in your cupboard for quinoa, Canucks Patricia Green and Carolyn Hemming just released Quinoa 365, published by Whitecap Books. It’s full of 150 quinoa recipes, including one for, wait for it… chocolate cake!
