Three Sisters Around the Greek Table

Yes, Three Sisters Around the Greek Table includes the recipes for spanakopita and souvlaki, but the self-published Adelfes cookbook by Ontario sisters Betty, Eleni and Samantha Bakopoulos also contains less mainstream recipes that their parents brought with them from Greece’s Peloponnesus region when they immigrated to Canada in the 1960s. The Best in World, Gourmand World Cookbook Award winner includes about 100 of them mostly inspired by the nuts, olives, figs, and other fruits and veggies their parents grew on small terraced gardens overlooking Kalamata, and the yogurt and feta they made from sheep and goat’s milk. Many of the recipes are vegetarian, “real Greek cooking,” according to the sisters. The potato and white bean salad recipe featured here is as “real” as it gets: hearty, healthy and totally vegetarian.
