Vegetarian Sandwiches

Bagged for lunch, served as a spontaneous supper, even divvied up into elegant finger-sized snacks: sandwiches are truly versatile. And, every country has its own version. Consider, for instance, Greek gyros or Isreal’s falafel-filled pitas, both easy to make at home now that exotic ingredients are just a supermarket away. There really are no limits or rules to making sandwiches. You don’t even need utensils to eat them.
