Celia Brooks Brown’s World Vegetarian Classics, published by Pavilion Books, is chockfull of 220 classic recipes from around the world that are historically vegetarian, rather than adaptations of meat recipes.

Precisely what any vegetarian wants — as well as anyone else who’s had it with our meat-and-potato winter.

Concerned with the difficulties of finding foreign ingredients and abiding by age-old techniques, Brown adapted each recipe, while adhering to its authenticity, of course, so that equally delicious results could be achieved in North American kitchens. As this is our Europe issue, a couple from its North and its South are included here so that you can veg out now that the warmer weather is here.
