Yummy Potatoes

Potatoes are truly versatile. They can be eaten for breakfast, lunch or supper, alongside almost anything, or as a main meal. They can be found in kitchens around the world and are loved by all nationalities (think British bangers and mash, Italian gnocchi and Jewish latkes).

Our affair with this starchy yet sustaining veggie wasn’t so spectacular from the start, however. Because it belongs to a family of plants whose leaves are poisonous, many believed that the entire plant was toxic, including its root or tuber, and linked the potato to everything from leprosy to syphilis. Thankfully, today we know that potatoes are actually good for us and contain lots of vitamin C, as well as potassium and fibre.

Here are our favourite French, Indian and Italian-inspired potato recipes taken from Marlena Spieler’s Yummy Potatoes, published by Chronicle Books.
