Holiday sparkle

If you only buy one bottle to carry you through parties and get-togethers over the holidays, let it be this one

Constraints can be humbling yet inspirational, particularly when considering something synonymous with generous excess. As the title of this column states, I'll only be discussing one bottle. Yet the holiday season offers up a myriad of events and experiences, to say nothing about a multitude of food. In short, this one bottle better be versatile!

If I’m forced to select only one wine to see me through the holiday circuit of gatherings, dinners and open houses, then I’m going with bubbly. Not just any sparkling wine mind you, to really jazz things up I’ll be pouring sparkling rosé. It catches the eye and tickles the tongue, capturing an essence of festivity while sidling up to turkey and all its side dishes — all in one glass!

So which one? Well, a sparkling pink wine such as the Louis Bouillot Perle d’Aurore Brut Rosé, for example. While I won’t say no to a flute of Champagne placed in front of me, this Crémant de Bourgogne (a sparkling wine from the Burgundy region of France) saves on the budget without skimping on flavour.

A blend of 80 percent Pinot Noir and 20 percent Gamay, it undergoes the same laborious méthode traditionnelle winemaking process as its more expensive Champers-brethren. For this poetically named “Pearl of the Dawn” vintage, the traditional method means a secondary bottle fermentation of at least two years, allowing the wine to develop an elegant fizz.

The end result is a vivacious bubbly with a fetching pink, salmon-belly colour. It’s quite fruity, with aromas of currant and kiwi fruit mingling with refreshing acidity and a lingering finish. Together these qualities add up to serious fun and food versatility. Not only will it work with turkey dinner, it pairs well with everything from delicate seafood-laden canapés to greasy takeout after a tiring day of holiday shopping.
